If you have a crockpot available, you know exactly how easy it is to throw in a few ingredients before work and let the crockpot do all the cooking for you so when you come back home you have a delicious beef pot roast ready to eat. If you don’t have a crockpot, I suggest you go out and buy one. It’s perfect for on-the-go moms who don’t have a lot of time on their hands to cook but don’t want to sacrifice on food quality and taste.

This crockpot beef pot roast recipe is quite rich in taste and is simply divine when the beef is juicy and tender after having been cooking in its own juices for 8 hours. In fact the crockpot is good for a number of easy yet delicious recipes, so be sure to check back often for more.

Ingredients

2 lb prime or choice beef roast

2 stalks celery

1 yellow onion

3 carrots

1 bell pepper

2 cloves garlic

2 tsp black pepper

2 pkg onion soup mix

2 tsp worcestershire sauce

1 tsp steak sauce

1/2 cup tomato juice

1/2 cup water

Directions

Cut the beef into servings as you like.

Slice the onion into rings.

Peel the carrots, then dice into small squares.

Dice the celery stalks.

Thinly slice the bell pepper.

Throw the vegetables into the crockpot.

Mince the garlic, then sprinkle it over the beef along with black pepper and onion soup mix. Then put the beef in with the vegetables.

Mix the worcestershire and steak sauce together with the water and tomato juice. Then pour it over the beef.

Ideally, you’d want to turn the crockpot to high for 30 min or so to seal in the juices, but it’s fine to just start it on low and cook for 8 hours.

Quick, simple, and great for sharing, you can’t pass up this spinach dip recipe. Also, like I was saying about how a good combination of foods makes a good recipe (see corn muffin recipe), this is another great example. The spinach, pecan, green onion, and onion soup mix complete the picture of a good dip. (I’m picturing Tom Cruise saying ‘you complete me’ to Renee Zellweger. Sorry, I really miss my late 90′s movies…)
