			<content:encoded><![CDATA[<p>Salmon, another great option to my post July 4th, no-more-meat, diet (for now)! I am well aware that pan frying salmon isn&#8217;t at all that healthy, but heck, I didn&#8217;t say no-more-oil diet, did I? (You can double-check my comments on <a href="http://www.recipemama.net/251/lamb-kebab-recipe/">lamb kebab recipe</a> and <a href="http://www.recipemama.net/279/cold-soba-noodle-recipe/">cold soba recipe</a> to see what I&#8217;m talking about here.) And besides, this pan fried salmon recipe is totally unique but yet still totally easy.</p>
<p>You&#8217;ll be surprised to see that this pan fried salmon recipe has got an Asian kick to it. I got a tip from my mom to use turmeric powder, also known as yellow ginger powder. Turmeric is a kind of South Asian spice that&#8217;s usually found in curries, and it&#8217;s got a dark yellow color to it. It smells peppery, mustardy and somewhat earthy. You can usually find turmeric at any Asian supermarket. If you do not have or cannot find turmeric, feel free to use other spices that you like.</p>
<p>This pan fried salmon recipe won&#8217;t dry out the salmon. On the contrary, the cornstarch coating makes the salmon nice and a bit crusty on the outside, but still moist and juicy on the inside. Also, what&#8217;s more Asian to this salmon recipe is the spiced up soy sauce that goes with it. Try them both out!</p>

<h2>Pan Friend Salmon Recipe</h2>
<h3>Ingredients</h3>
<p>Yield: 2 salmon fillets</p>

<p><em>Salmon</em></p>
<ul>
<li>2 pieces of salmon fillet</li>
<li>1 tbsp cornstarch</li>
<li>1 tsp salt</li>
<li>1/2 tsp black pepper</li>
<li>1 tsp turmeric (yellow ginger) powder, or any other seasoning that you like</li>
<li>3-5 slices of ginger, optional</li>
<li>vegetable oil</li>
</ul>
<p><span style="color: #3b422e;"><em>Spiced Soy Sauce</em></span></p>
<ul>
<li>soy sauce</li>
<li>lemon juice</li>
<li>Sriracha sauce, or any spicy/chili sauce that you like</li>
</ul>
<h3>Directions</h3>
<ol>
<li>Clean the salmon with water and a bit of lemon juice and salt.</li>
<li>Pat dry salmon and set aside on rack.</li>
<li>In a large zip lock bag, mix cornstarch, salt, pepper, and turmeric powder together.</li>
<li>Put salmon pieces into the bag and shake. Make sure the salmon pieces are coated with the seasoning evenly.<br />

<li>Heat a non-stick skillet with oil.</li>

<li>Fry about 5 minutes on each side, until golden brown. Cover the pan if oil is splattering.</li>
<li>Remove from heat and set aside when done.</li>
<li>For the sauce, mix all the spiced soy sauce ingredients together in a small bowl. Use as much to your liking.</li>
<li>Serve salmon with sauce over rice.</li>

My July 4th <a href="http://www.recipemama.net/251/lamb-kebab-recipe/" target="_blank">lamb kebabs</a> were to-die-for, but my body (or is it really my brain?) is telling me to stop my meat intake for a day or two. So I decided to make some soba noodles. Cold soba noodles to clarify, which is perfect for the summer!</p>
<p>Cold soba noodles are so easy to make. You won&#8217;t believe this recipe. Besides the soba noodles, you can pretty much do whatever you like to the recipe. The portion of the dipping sauce, green onions and wasabi are all up to your discretion &#8211; use as much or as little as you&#8217;d like. For example, I love green onions, so I like to chop a lot to go with my dipping sauce. That way, every time I dip my soba noodles into the sauce, I&#8217;ll get at least 6-8 green onions pieces. They really do add an extra texture to the soba noodles. Yum yum!</p>

<h2>Cold Soba Noodle Recipe</h2>
<h3>Ingredients</h3>
<p>Yield:&#8217; 1 serving</p>

<li>soba (buckwheat) noodles &#8211; any kind that you like</li>
<li>1/2 cup dipping sauce for soba (tsuyu or mentsuyu) &#8211; I use Kikkoman&#8217;s</li>
<li>2 tbsp green onions, finely chopped</li>
<li>wasabi, fresh or prepared from a tube, optional</li>
</ul>
<h3>Directions</h3>
<ol>
<li>Chop the green onions and set aside in a bowl.</li>
<li>Pour dipping sauce into a cup. Refrigerate until ready to serve.</li>
<li>In a pot, boil water.</li>
<li>Add soba noodles. Turn heat down to medium high.<br />

<li>Stir the noodles occasionally.</li>

<li>When done, remove from heat.</li>
<li>Drain the noodles, and run it under cold water for a few minutes.</li>
<li>Serve the noodles on a flat sieve, which you can buy at any Asian supermarkets.</li>
<li>Mix the green onions into the dipping sauce. Stir well. Add in wasabi if you like and mix well.</li>
<li>Dip the noodles into the dipping sauce.</li>

I need variety. Especially in the summer. So for my July 4th barbecue, I was determined to celebrate the American liberty by freely changing up the all American diet. So I made lamb kebabs. I&#8217;d have to say that lamb kebabs are such a nice alternative to hamburgers and hot dogs. You disagree?</p>
<p>My lamb kebab recipe will make you want to make lamb kebabs every time you barbecue. They are easy and fun to make. And you&#8217;ll still get to enjoy the sun and the grill. Still American, still 4th of July.</p>

<h2>Lamb Kebab Recipe</h2>
<h3>Ingredients</h3>
<p>Yield: 6-8 kebabs</p>

<li>1 pound ground lamb</li>
<li>1/2 tsp salt</li>
<li>1/2 tsp black pepper</li>
<li>1/2 tsp cumin</li>
<li>6-8 wooden skewers, soaked in water for 30 mins (to prevent skewers from catching on fire)</li>
<li>1 large tomato, diced</li>
<li>1/2 red onion, sliced</li>
<li>1 cucumber, sliced thinly</li>
<li>olive oil</li>
<li>6-8 pita breads</li>
</ul>
<p><span style="color: #3b422e;"><em>Yogurt sauce</em></span></p>

<ul>
<li>1 cup plain Greek yogurt</li>
<li>3 tbsp fresh mint, chopped</li>
<li>zest of 1 lime, shaved from skin</li>
</ul>
<h3>Directions</h3>
<ol>
<li>Combine yogurt, mint and lime zest. Refrigerate until ready to serve.</li>
<li>In a large bowl, mix in salt, pepper and cumin into the ground lamb. Mix evenly. Let this sit for 30 minutes or so.</li>
<li>Mold the lamb into a hot dog shape around the top half of the skewers.</li>
<li>Brush the lamb lightly with oil.</li>
<li>Heat grill to medium high.</li>
<li>Cook thoroughly until brown. Remove from grill.</li>
<li>Next grill the onions until they soften. Remove when done.</li>
<li>Lastly, warm the pita breads on the grill.</li>
<li>Remove the lamb from the skewer and slice diagonally.</li>
<li>To serve, spread some yogurt sauce on a pita. Add lamb slices, grilled onions, tomato, and cucumber.</li>
