French Onion Soup Recipe
Sometimes a great tasting French onion soup hits the spot just right. It’s so easy to make and just requires a few ingredients. You’ll surprise yourself how a few onions can turn into such a delicious French onion soup. An interesting tidbit about French onion soup and the reason for its simplicity, is that it was concocted by the French working class in the 18th century to make a cheap meal that would last them for grueling 18-hour work days.

French Onion Soup Recipe
Ingredients
Yield: 5-8 bowls

- 6 yellow onions
- 1.5 qt chicken stock, beef stock, or vegetable stock
- butter
- Worcestershire sauce
- water
- rye bread
- mozzarella cheese
- green onion
Directions
- Coarsely chop the onions with the help of our recommended onion peeling technique.
- To get a nice onion flavor, first melt some butter in your soup pot and cook the onions until they are lightly brown.
- Now add in the chicken stock (or beef or vegetable stock), and as much water to make as much soup as you need.
- Add Worcestershire sauce if you are using a lot of water and need more flavor. Be sure to season to taste.
- Simmer on low heat for 30 min or until onions are tender.
- While the soup is simmering, pre-heat your oven to 400F.
- Put a slice of rye bread at the bottom of each oven proof bowl and sprinkle the bread with enough mozzarella cheese to cover the each slice entirely.
- Put the bowls with the bread in the oven and bake for about 10-15 min or until the cheese has melted.
- Pour the soup with onions into each bowl.
- Finely chop some green onion and sprinkle on the bread for garnish.
