Feta Pasta Salad Recipe

I totally ran out of time today but was hungry as heck. So scrounging in my fridge, I found all the necessities to make this pasta salad. (Whew – I feel very lucky at this point.) This pasta salad recipe is very easy to make. If you don’t have cooked pasta laying around, no worries, pasta isn’t terribly hard to cook in the first place. What makes this pasta salad so appetizing is the feta and sun-dried tomatoes. These two ingredients in the recipe can just turn any boring old salad into a very satisfying dish that cures your hunger!

Ingredients

Yield: 1 serving

  • 1/2 cup pasta – any kind you like
  • 1 cup spinach
  • 2 tbsp pine nuts, or however much you want
  • 2 tbsp feta, any brand you like
  • sun-dried tomatoes, chopped
  • salt
  • olive oil

Directions

  1. Bring a pot of water to a boil.
  2. Slightly salt the water. Add pasta.
  3. Cook the pasta to al dente – about 4 minutes. Drain pasta and set aside.
  4. Grease a new pan (or you can use the same pot) over medium heat. Sautee the spinach for about 2-3 minutes. Add a dash of salt to taste. Remove from heat.
  5. Toss together the pasta, spinach, pine nuts, and sun-dried tomatoes.
  6. Sprinkle some feta on top.
  7. Serve immediately.
