Chicken Salad with Cashews Recipe

This recipe works great when you have leftover chicken scraps and you don’t know what to do with it. Chicken salad makes for a versatile and delicious meal that you can put on top of your salad or in your sandwich or just straight up on the side. Since it’s technically a “salad” you won’t feel bad about it either. I’ve had lots of chicken salad recipes in my time but the one I always remembered had cashews in it. The wonderful crunch of the cashew nuts paired with the softness of the chicken meat was what made this cashew chicken salad recipe one I prefer above all others. I love it in a sandwich with just some basic lettuce and cheese and nothing else. The sweetness of this particular recipe pairs especially well with sourdough bread if you’re going the sandwich route.

  • 2 cups chicken, shredded or diced
  • Handful of unsalted cashews, halved
  • 1 tbsp apple, diced
  • 1 tbsp cucumber, diced
  • 1/2 cup mayo
  • 1 tsp lemon juice
  • 1 tsp honey
  • pinch of salt, sugar, and pepper

Serves: 2

Directions

  1. Mix the chicken, cashews, apple, cucumber, lemon juice, and mayonnaise in a big bowl and get an even coat over the chicken and apple/cucumber slices.
  2. Add salt, sugar, and pepper to taste.
  3. Taste the chicken salad and see how much you would like to sweeten the chicken salad. Then add honey to taste. Add the honey last as it will allow you to adjust the flavoring to your liking. A little sweetness pairs well with the apple and cucumber in this chicken salad recipe so be sure not to skip this step, but don’t go overboard either.
  4. If you are making a sandwich, spread mustard and mayonnaise on the slices. Add a few slices of your favorite cheese with some lettuce leafs. Then add in the chicken salad. Works well with sourdough bread and Swiss cheese.
