This chicken with black bean sauce recipe will surely beat PF Chang’s! Too bold you said? I think not. (This is America, right?) I just think that PF Chang’s ‘Chinese’ food isn’t very Chinese – it’s what I called Americanized Chinese. Nice decor, but food, not so much. Sorry, PF.

I just know that I like it and it goes great with chicken and fish. Lo and behold, it turns out that those Chinese black beans are actually soy beans that have been fermented, making them black in color. Well, duh! It makes so much sense now (thanks Google). Fermented black beans are salty, a bit pungent and somewhat spicy. No wonder I like them! (Remember what I said, look to Andrew Zimmern for inspiration. Or are you thinking ignorance is bliss?)

But what’s great about grilling salmon versus chicken is that you don’t really need to marinate the salmon, or let it sit for a while. (But you sure can if you’d like.)
This salmon salad recipe is very creative in that the salmon is first glazed with maple syrup and other goodies that blast the fish into a big flavor storage. I’ve learned this through many life lessons, and boy am I glad I’ve opened up my palette to new things! (Though I am still no Andrew Zimmern, and okra probably isn’t a bit bizarre by his definition’)
Anyway, this okra recipe is a family homemade traditional, tried-and-true, and perfected. (So yes, my palette’s already been accustomed to this cooking style of the okra, so okay, maybe I cheated a bit on this one.) Cooking okra with chili paste and dried baby shrimp or anchovy just spices the flavor up a few notches! If you can’t get dried baby shrimp or anchovy, you can skip this ingredient. But if you can find it, definitely try it out. The smell of the shrimp or anchovy might intimidate you at first, but once you bite into the okra, you’ll appreciate the flavor of the okra much more.

Stir Fry Chicken Recipe
For my own health, I decided to stir fry some chicken breast this time. (Yes I know, I had too much pan fried foods lately. They’re so good though!) Stir frying chicken breast is not only good for you, but it’s rather tasty too, especially when you add in mushrooms and carrots.
This stir fry chicken recipe calls for marinating the chicken breast for a bit, just 30 minutes or so. Chicken breast is white meat, so it’s a bit tougher and drier than dark meat. (I don’t need to remind you, right?) Therefore, marinating the chicken breast will definitely add some flavor to the chicken. Don’t skip this step! (You can, but you might end up paying for it with dry chicken. Don’t say I didn’t warn you, tsk tsk!) I use corn starch in the marinade so that it will prevent the chicken from going dry. You also don’t want to overcook the chicken either.
So, stir fry some chicken breast up with this easy recipe. Let my staple food become your staple food. Hooray! (Or not, I won’t be offended.)
Pan Fried Steak Recipe

I’m probably giving you the impression that I like to pan fry food. Well, you’re almost right. It really depends on my mood and what I got to work with. If I’m in the mood for something a bit crispy on the outside, but nice-and-juicy but not totally-drenched-in-oil on the inside, then I’ll go for pan frying. Each of my pan fried recipes is a bit different. (Check out my pan fried chicken recipe and pan fried salmon recipe.) I have to admit though that the main driving force for me to pan fry steak this time is that because the heat outside was way too unbearable for me to use my grill! Why on Earth would anyone want to stand outside grilling steak while sweating and getting a sunburn? No thanks, I’d rather stay inside and chill in my A/C’d kitchen.
Anyway, this pan fried steak recipe is unique from my other pan fried recipes. The technique for pan frying steak is to actually bake it beforehand, so that the steak will semi-cook evenly in the oven. This way, you can save the best for last by pan frying the steaks to perfection without worrying about unevenly cooked steak. Be careful though, you don’t want to dry out the steak by frying it too long either.
Also, what’s so great about this pan fried steak recipe is that the pan fried steak is topped off with mouth-watering black pepper mushroom sauce. Don’t be afraid of the ingredients for the sauce, just try it out. You’ll like it!
